Are fish pieces supplied to fish and chip shops already battered?

You used to see a fish batterer standing at the fryer, slopping the fish in and out of the batter tin. It doesn't happen in my fish shop and the guy is so threatening I daren't ask.

No. Larger pieces of fish are sent into shop, then cut down to size, they then make up the batter mix then as you say are sloshed in and out of the mix then dipped.

My wife worked in a chippie for 5 years and that is what she told me happens.

For the batter to be nice and crispy and fresh tasting, it should be battered just previous to frying.
I'd tend to agree with the other answerer who recommended you change fish 'n' chip shops.
You say he's threatening, but does he look like Elvis, that's the question?

No they still batter them themselves. At the back in some places. Change your chippie is what I say.
