Meat for Kebabs?

Im wanting to know if anyone knows the exact type of meat they use in the kebabs and if it can be bought anywhere to make your own at home??? Or if anyone knows any good recipes for them

SHISH KEBAB

Lean cut beef (sirloin tip is very good)
Assorted veggies: mushrooms, pearl onions, cherry tomatoes, green pepper, (cut into bite size pieces

MARINADE:

2 tbsp. brown sugar
1 tsp. dry mustard
1 tsp. ginger
1/2 tsp. garlic powder
3/4 c. water
6 tbsp. soy sauce
2 tbsp. cooking oil
1 tbsp. vinegar

Cut beef into cubes approximately 1 inch square. Place in prepared marinade overnight or minimum 8 hours. When stringing meat and veggies onto skewers, push close together if you want meat more rare and juicy; leave space between if you want crispy and well done. Reserve marinade to baste over kebabs while cooking. This gives veggies extra flavor and keeps meat from becoming dry. Recipe is best for outdoor grill. Serve over bed of hot rice, or whatever!

You can use any kind of cubed meat - chicken, pork, beef, lamb...Buy it from your grocer/butcher, cube and marinate it yourself.

I always marinate the meat in Italian Dressing--------- and I've used beef, chicken, pork, turkey, shrimp AND scallops.

Try steaming some snow-pea pods & threading them on with cherry tomatoes.
Other veggies--tomatoes, onions, multi-color peppers, zucchini, yellow (summer) squash, corn on the cob chunks, canned potatoes, and fresh mushrooms.

Chicken Kebabs

Ingredients:
Chickens, cut into 16 1 inch pieces
2 zucchini, cut into 1 inch rounds (16 pieces)
2 red peppers, cut into 16 square pieces
16 pineapple chunks
4 ears corn, cut into 16 round pieces

Marinade
1/4 cup olive oil
1 cup pineapple juice
1/4 cup soy sauce
1/8 cup brown sugar
1 teaspoon Worcestershire sauce
3 cloves garlic, minced
2 slices ginger, minced
1/4 cup cilantro, chopped
2 scallions, sliced
3-5 dashes hot pepper sauce

Steps:
1. Alternate on each of 8 skewers 2 of each chicken,zucchini, peppers, pineapple, and corn.

2. Place in a shallow container.

3. Mix all of marinade ingredients together and pour over kebabs.

4. Refrigerate for 1 hour.

5. Remove from marinade and heat marinade simmer 5 minutes.

6. Grill kebabs for about 15 minutes turning and basting every 5 minutes till chicken is browned.

7. Serve with extra marinade.

Beef Kebabs

Ingredients:
6 ounces sirloin steaks, cut 1 thick
1 (2 1/2 ounce) jar mushrooms, drained (whole mushrooms)
1 green bell pepper, cut into 1 chunks

Marinade
1/4 cup dry red wine
2 tablespoons olive oil or vegetable oil
1 tablespoon wine vinegar
1 teaspoon sugar
1/8 cup fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon pepper

Steps:
1. Place steak on unheated rack in broiler pan.

2. Broil about 3" from heat until medium rare (16-18 minutes), turning once.

3. Let cool slightly.

4. Cut meat into 3/4" pieces, trimming off all visible fat.

5. Place steak and mushrooms in a plastic bag; set in a shallow dish.

6. Combine wine, oil, vinegar, sugar, parsley, salt, rosemary, and pepper; pour mixture over meat and mushrooms.

7. Close bag and marinate overnight in refrigerator, turning bag occasionally.

8. Drain meat & mushrooms, discarding marinade.

9. To assemble each appetizer, skewer a piece of meat, a mushroom, and a piece of green pepper with a wooden pick.

Rabbit is particularly good.
Segment and debone and put on the skewer, and then on the rossitiere.
Baste occasionally, and slice off the meat as it cooks.

I always have the butcher cut up a tri tip for me. If you don't have tri tip where you are, just ask your buther what type of beef you should use and if he will cut it to size for you.

Also yummy with chicken.

There are some great recipes above for sauces etc. The Jack Daniels marinade is also yummy (although full of sodium).

I usually add pineapple and bell peppers to mine as we don't like mushrooms or tomatoes.
