Why is it city chicken named city chicken even though it is pork?

City chicken is cubes of meat, such as pork, on a stick. It is cooked like fried chicken and seems similar to a chicken drum-stick. It's a sort of "mock" chicken. It is an invention of butcher shops (which are in cities), hence the name.
