They buy their beef patties unfrozen, only as needed every 2-3 days. If the beef is cooked at 165 degrees, for more than 30-45 seconds, it's safe. If the beef stays in the cooler too long, they throw it out, and use fresh stock. That's where the manager tries to see how much to get when ordering.

The McDonald's here shut down for 2 months to build a new one. It caught the Wendy's manager off guard, and for 1 day, all they had was chicken and salads. They had not anticipated the extra business they would get when McD's shut down.

meat has a sell or freeze by date in grocery stores.
