The more aged a balsamic vinegar is the stronger and sweeter the flavor. The best are typically sold in very small bottles and are very expensive. These are almost always used straight or as a splash on a salad, etc., because they're just too expensive to use in sauces, vinegarettes, etc. I was in a gourmet food shop one time and they let us sample a good quality balsamic with a small chunk of parmagiano reggiano cheese and also with a strawberry. It was almost like a dessert.

The really good, aged balsamic veinegars are also thicker than the cheaper ones.

Aging will typically make one better than the other.

I dont know about balsamic vinegar but chardonnay vinegar is really good and i dont mean buy a bottle of White wine and put it on your food

i have recently bought a bottle of Belazu in the UK and it is marvellous. it is sweet, and very syrypy. quite pricy but worth every penny if you want something special. great on salads.

balsamic vinegar bets better with ageing, and you should expect to pay more for something very old.

aceto balsamic is the better. But when you buy this you don't pour it out you use a dropper (regular balsamic works for me though)

There are two kinds of balsamic vinegar: artisan-made and commercial. Buying artisanal vinegar -- made of only grape must -- the real thing and the most precious -- is easy to recognize and never used in cooking or salads.
