Why do some foods go soft and some hard?!


Question:

Why do some foods go soft and some hard?

why do crisps and biscuits go soft when exposed to air but bread and rolls go hard?


Answers:
Maybe its something to do with relative humidity.Crisps are very dry , so they take on water from the air.Bread is more humid , so it dries out .No idea really , good question

Wow what a mind bender.......good question.

I'm thinkin its the moisture content of the food.
