They are indeed pig intestines. Actually called chiterlings. May sound disgusting to some but many people from the South like them. I don't.

Pig intestines, washed boiled , sliced and fried in butter with seasoning. They sound disgusting but they are really good.
Totally a southern dish, along with corn pone, grits and red eye gravy.

It is often said that the only thing that can't be "used" from a pig, is it's OINK. Chitling is one of a variation of spellings for the Fecal tubes of a pig.

Chiterlings are the intestines of a pig, which have been cleaned to remove the fat and other nasties inside,which makes them into a hollow tube, they are then boiled in slightly salted water.
Sprinkled with salt, and served up with bread and butter and mustard, they are delicious.
