i think it's celery, onions and carrot.

This is probably dependant on where you live, or which style of cooking you want. For some parts of Italy it's celery, onions and tomato. For Cajun it's celery, onions and green bell peppers. For Asian food it's more likely to be onions, garlic and garam masala and some Middle Eastern cooks would probably suggest onions, garlic and aubergine (eggplant). Needless to say most countries savoury cuisine starts with onions.
