Cut up some parsnips, wrap em in foil and bbq em. I no vegi, but they taste delicious.

Potato curry

8 tablespoons corn, groundnut oil

2 tablespoon fenugreek seeds

4 garlic cloves, chopped

4 tablespoons mild or hot curry power, to taste.

4 ib potatoes, peeled and cut into 1cm (1/2 - inch ) cubes

16 fl oz water

salt

Heat the oil in a frying pan that has a lid and add the fenugreek seeds, and the garlic.

Fry gently over a moderate heat until the garlic is browned.
Lift out the garlic and fenugreek with a slotted spoon and discard.

Add the curry power to the frying pan and cook, stirring with a wooden spoon, for 3-4 minutes.

Add the potatoes, water and salt.

Cover and simmer for about 20 minutes, until the potatoes are tender.

If the potatoes seem to be drying out during cooking, add a little hot water, although the finished dish should be quite dry.

Baked beans - I use canned. For 2 cans I add 1 small diced onion, 1/4 c. each ketchup and brown sugar, 1 tbsp. mustard.

Corn on the cob - For the kids I leave it right in the husk and cook it. For the adults I take it out of the husk. If your corn isn't in season soak it for an hour or so in sugar water.

Veggie Kebabs. - I generally buy them already skewered and brush them with a little balsamic dressing while they are grilling.

Grilled pineapple - I know it sounds nasty, but it's delish!

Baked Potatoes - Just wrap in foil and let them cook on low for an hour or so.

Grilled Pizza dough - Flatten the dough out and brush one side with olive oil. Place that side down on the grill. Brush the other side with olive oil. When that side is done, about 5 minutes, then flip. Top it with a little more olive oil, minced garlic, salt pepper and parm cheese.

I like to make my own veggie kebabs.

Onion, tomato, courgette, mushroom, aubergine - cut them to size and get them on to a skewer - brush with a little olive oil.

Corn on the cob. Having taken off the husks, you can either cook them whole or cut them in half (drag a knife around the middle and then simply snap them!). Delicious!

Jacket potato. Wash and prick the potato. Wrap in foil with the shiney side of the foil on this inside. Put them right on the coal while the BBQ is warming up - this one does take a little practise, but you learn what to do after you have got it wrong a couple of times!

You always have the option of salads - and while they are nice, it isn't always what someone wants. And if you are inviting a few veggies round, then they really do appreciate that you have actually cooked them something rather than just having to eat the salads!

One other thing that I will add is that I have actually BBQ'd a whole leg of lamb. The weather forecast told us it would be a grotty weekend and I bought it for Sunday lunch - but the weather was absolutely fantastic! So, leg of lamb went on the BBQ. But! I had also bought spring greens to go with it - so I made little parcels of the greens and a knob of butter in foil - and put them on too! - wonderful!

Use your imagination!

Oh, and by the way, as a sweet you really must try bananas! Just slice them down one side and cook both sides. Squeeze them a little to open them up for serving and provide maple syrup and ice cream to go with them - they really are a 'wow!'

BBQ sauce

Corn relish or mayo and salad.

I like a well flavoured cous-cous. A north african style with onion, chilli, lemon juice, cumin, mint, coriander and parsley. I throw a few toasted pine nuts in as well. Goes well with any meat or fish.
