Shelf life of tahini?

How long does tahini last in the refriderator? I opened a jar of organic tahini last week, and I had to empty it out into a bowl because it took a lot of mixing to get the oils blended in (I also added some lemon juice). The unused portion has been in the fridge for a week, still in the bowl, covered with saran wrap. Still good to eat? (I'm a little paranoid of food poisoning, in case you couldn't tell)

Tahini is a paste made from ground sesame seeds. It is a major ingredient in hummus and other dishes from the Middle East.

It is remarkably stable and will keep for years without turning rancid, even in hot climates.
