What are the beans that cowboys eat?
In Westerns, when they're out on the trail and just seem to eat beans every night - what kind of beans are they?

They are probably Pinto beans. Pinto Beans are grown and eaten in the southwest. They are the beans that re fried beans are made from.
the cowboys that I've seen only like to eat pudding, not beans.

they are eating "red beans" which are cooked in a pot very slowly over a fire. seasonings are added per taste and cooked with lard

They are eating pinto beans and tortillia's if they are close to Mexico, if they are in Wyoming, they are eating baked beans and corn bread or biscuits.
I love beans so much I always told my Mother I could be a cowboy, cause I could eat that everyday like they did.

navy beans [dried] rehydrated and cooked with the dried salted pork [similar to bacon], yes the constant diet is boring and gas producing [but on the open range, surrounded by a herd of smelly cows ... who cares], it is spiced up by the addition of chilli, tomatoes etc, the beans are a great source of fibre and protein, in the dehydrated state they are light to carry and less bulky, so more days provisions can be carried, [as opposed to fresh foods], and there is no spoilage due to lack of refrigeration/proper storage facilities. As soon as the cowboys hit town they would vary their diet with large hunks of beef [generally rare, to emphasise the freshness of the meat component of the meal]
