The sides only look different, they function the same.
One side is shiny and one dull.
The reason: the manner in which it is made.
FYI: Wax Paper and parchment are NOT the same.
It doesn't matter, you can use either side as there is not difference in cooking.
I bake on the shiny side, but I have no idea why. It doesn't make any difference, as far as I know. Anyway, I never cook meat.

I don't know that it makes much of a difference but I always have the shiny side on the outside.
You can use either side, but you should look for a healthier medium to cook with. Aluminum can leach into your food, and it's not healthy.

You should use whatever you prefer.The difference is too negligible to really matter.
Don't forget t oil it a little so the foil doesn't stick.
I never noticed that there was a difference, so I've been cooking with either side touching.
