Gee nobody answered your question ,so I will, Rare steak is perfectly safe to eat. Enjoy it

An ultra -rare steak is called a black and blue steak. Home equipment doesn't generate enough heat to make one so don't even bother to try it .But the next time you're at a good steak house order one. I know that the waiter will ask you to repeat the order bc few if any people order steaks that way.

There are varying degrees of doneness:

very rare (not cooked on the inside) temp = 135F
rare (somewhat cooked on the inside) temp = 140F
medium rare (pink on the inside) = 145F
medium (barely pink) = 160F
medium well (no pink, very little juice) = 170F
well done (completely cooked, no juice) = 180F

Personally, I prefer very rare to rare. Anything more than that is shoe leather and a waste of good meat.

the center will be red and fleshy
it should be tender and easy to chew
the meat has been hanging for days the fluid inside may be red but is not blood that was drained at the slaughter.
blood is too valueable to the sausage industry.

It can be slightly red or a pink color on the inside, if it has a more rich red/purple look on the inside you should put it back on the grill

*Minute Steak - 1 minute cooking each side
*Rare Steak - 3-4 minutes each side, depending on thickness.
*Medium Steak - Cook as rare, then 3-4 minutes each side on medium heat
*Well Done Steak - Cook as rare, then 4-5 minutes each side on medium heat.

Rare steak is well cooked on the outside (on a very high heat), and yes it is bloody on the inside not to mention being both bloody delicious and super tender!!!
