remove the heads and rinse them well and put them in a good zip lock bag and fill that bag with water,they will be like when you caught em ,when they get thawed out, no freezer burn!

Being a former chef I would recommend to clean and devein them, rinse them in slightly salty water, 1 tablespoon for 4 cups of water, then lay them flat on a tray or cookie sheet covered in saran wrap, the place another one over it tight, let them get hard frozen and the bag them, depending on the size or sizes, pack them for use in dishes were you would use the whole bag or you can if they do not stick together take them out individually, but as most home freezers both in the frig or chest type defrost internally, they can get a bit of ice on them.
