How long should you marinate chicken thighs and london broil before grilling?
Answers:
Overnight usually, the enzymes that are in the marinade help tenderize the protiens, and also will migrate through the product filling it with the flavoring. The longer the marination the better the product. I typically will leave my food marinating for at least overnight, unless its a quick marinade designed for the purpose of just an hour or two.
It depends upon the weight. But most people say 24 hours
I've heard it's best to marinate for at least 2 hours in the refrigerator. In my own personal opinion, I like to marinate the day before, or at least 12 hours
Chicken thighs do not really need tenderizing, so just an hour or so is plenty of time to infuse the flavors of your marinade into it. London broil - aka flank steak - is a typically tough cut of beef that needs a lengthy marinating time to break down the fibers and make it tender...12-24 hours is great, the longer being ideal. You also want to make sure to cook the london broil only to medium-rare, medium at most...anything more and it will be tougher than desired.
