Question:

How long does Gorgonzola cheese last?

I know technically gorgonzola is a moldy cheese, so how will I know if the cheese has gone bad?


Answers:
The mold in bleu cheeses is actually blue, hence the name. The mold that will grow on the cheese from going bad will be green and you won't be able to mistake that. It will look very different from the veining in the cheese. If it appears, cut it off with a clean sharp knife, if you have more than one spot, clean the knife then slice that off. That's so you don't distribute the "bad mold". If it's been around a while, consider doing some steaks with a bleu cheese sauce or making a bleu cheese dip for chicken wings. You can find these recipes at food network. Sorry, to answer the question, several weeks.

Gorgonzola is usually wrapped in foil to keep it moist. Refrigerated and carefully wrapped, it will keep well for several weeks.
