Question:

How long can chicken stock be left out before you cannot eat it?

I accidentally left my chicken stock out and off the heat overnight (10 hours). Since then i've boiled and froze it it but i don't know if it is safe.


Answers:
If you reboiled it the morning after you had left it out, and you boiled it through, i.e. it boiled for at least 5-10 minutes continuously, it will be fine. After that treatment, it will have been in the same condition once more as if you had got it ready for freezing the night before the way you probably intended to do.

Had the stock deteriorated overnight, you would certainly have noticed: by smell, and by the tell-tale signs of fermentation starting, principally disconcerting bubbles erupting at the surface like a dubious 'swamp', and (re-)boiling wouldn't have helped you out then. Sour stock is not easily missed. :-/

Bottom line, if you're still concerned, then it's all not worth the candle and you'd be better off abandoning it for peace of mind. But from what you've described and you've said you've done, I can see no reason that I would do so myself.

you need to throw it out...it can only be out a couple hours and that's stretching it

Food can be left in the Temperature Danger Zone for 4 hours....You are WAY over that time period...Just throw it away and start again!

If it was vegetable stock, then you could still use it, but since it is chicken, you need to throw it away immediately.

you need to throw it out, Quickly.
