White Cheese Sauce at a Mexican Restaurant?

My wife and I love Mexican restaurants and have found a lot of them serve a white cheese sauce. It is great as a dip for chips. I think it is just melted pepper-jack cheese, is this true?


Answers:
It's actually white "processed cheese product"--basically white Velveeta. The white kind comes plain or with jalapenos already in it. It's in most larger grocery stores' cheese cases. Just cube it, melt it in the microwave with a bit of milk (stirring frequently of course) and grab some of those thick authentic chips. Tasty!

OMG that cheese is great, but I am sure they have added in more ingredients.

Mexican restaurants generally use Monterrey Jack cheese. At a local place here, they make the BEST sour cream sauce, and I needed to know how it was made. It's basically just sour cream, MJ cheese, some salt and some onion powder.

They do sell white queso in the stores. Not sure if you have Kroger where you live, but I have seen a white queso there. I think even Tostitos brand has it. Find that, look at the ingredients on the label, and go home and get creative.
