I LOVE MEXICAN FOOD! The thing I would like to know is how to make the cheese dip @ home...I know it's goat cheese but what else is added to it? Does anyone know? I would like to make some @ home one night for me and my fiancee to poor over some chicken nachos w/ bell peppers and onions! SERIOUSLY, please answer if you really know how to make the cheese dip..thanks! YUMMY!

The feta dip is actually a mediterranian dip, this may not be what you want, so I posted one with feta and several without.

2 (8 ounce) packages fat free cream cheese, softened
? 1 (8 ounce) package regular or low fat feta cheese, crumbled
? 3 cloves garlic, peeled and minced
? 2 tablespoons chopped fresh dill

In a medium bowl, thoroughly blend cream cheese, feta cheese, garlic, and dill with an electric mixer. Cover, and refrigerate at least 4 hours.

Several variations of nacho cheese dip:
1 can El Rio mild cheese sauce
1 can El Rio hot cheese sauce
1/2 lb. sausage, browned and drained
1/2 lb. ground chuck, browned and drained

Mix meats and cheese sauces. Microwave until warm, stirring often

1 lg. block Velveeta cheese
1 sm. med. jar salsa
1 can cream of mushroom soup
1 to 2 lb. ground beef

Melt cheese in crock pot; brown hamburger. Add hamburger and all ingredients to melted cheese. Keep crock pot on low. Stir occasionally. Serve with taco chips

2 lbs. Velveeta cheese
1 lb. Monterey Jack
1 lb. Mild Longhorn Cheddar Cheese
1 stick butter
1 lg. onion
1 jar picante sauce
1 can chopped green chilies
Milk

Melt all cheeses at low temperature with butter. Add remaining ingredients. Cook over low heat until good consistency. Small amount of milk may be added to achieve texture desired.
NOTE: May be refrigerated and reheated. Gets hotter every time reheated.
2 sticks butter
2 onions, finely chopped
5 heaping tbsp. flour
3 c. milk
1 or 2 cans Rotel tomatoes (to taste)
10 oz. can green chilies
2 lbs. Velveeta cheese

Fry onions in butter over very low heat or in double boiler. Add flour. Add milk stirring continously. Add tomatoes, green chilies, and cheese. Stir frequently until cheese melts. Serve in slow cooker to keep cheese melted

2 cups easy melt white processed cheese, shredded
3/4 cup milk
1/8-1/4 cup pickled jalapeno peppers, with juice



1. Warm milk, slowly add shredded cheese,when melted add jalapenos.
2. As it sits it will become firmer.
3. If the consistancy is not firm enough add more cheese, if too firm add more milk.
4. Can prepare and reheat in the microwave.

I owned a mexican restaurant. This recipe is what we served to our customers. Many people think it contains goat cheese, but what you customarily find in restaurants is made from easy melt white american cheese, purchased thru suppliers or large supermarkets.
