Very fine wire inserted right between the eyes into the brain.....if you don't have a wire use a long heavy sharp needle the same way. If it is a large fish you will need to use the wire.
humanely...kill? aint gonna happen, just kill the damn thing and eat it, or make someone else kill it so you dont have to watch. id say cut its head off and make it quick

get a predator like a bigger fish and let it eat it or get huge bowl, pour listerine and drop those fishes..no listerine, hahaha use your urine.
There is really no humane way, but the way I've seen fish market people do it is with a rubber mallot with a quick fast blow to its head. Amitabha.

I grew up around commercial fishing and have fished all my life. If you don't want to kill it yourself, give it to me and I can fillet it fast enough you won't even realize it's dead. The fish is your food, take charge and stop being a wus!!

seriously humanely and killing in the same sentence you cant. Killing something is still killing there is no real humane way. you could practice the good old catch and release. If you want a real answer....go to a grocery store and buy it already dead.
Hit it on the back of the head with the back of your hunting knife or a firm piece of wood.
If you are right handed hold the fish in the gills with your left hand and hit just in front of you hand.
One short sharp knock will break the neck.
