There are at least 5 reasons beside the highly, highly obvious one.
1. Shrimp are creepy bottom-dwelling ocean cockroaches that inspire so much primal fear in some people, that even their mere mention causes waves of panic and motor muscle loss, blurring speech.
2. The speaker is so allergic to shellfish that pronouncing their names correctly is risky and could induce a closing of the windpipe. (By the same token you may hear some people say "pay nut" or "pennut")
3. The speaker was born into a tribal community that practices tongue circumcision, which makes pronouncing the "shr" very painful.
4. You have a bad hearing disorder.
5. You live in a country where English is never spoken, even by tourists. Furthermore, the seafood police strictly enforce a ban on the word "shrimp" that was instituted in your city when it was governed by a mayor was from a tongue-circumcising tribe who was embarrassed by his disability. Lastly, etiquette in your culture frowns on a word that implicitly discriminates against stature-challenged individuals.
I'm not sure exactly, it may just be a regional dialect thing. Possibly the same reason most folks say warsh for wash, or drownded for drowned.

No...Some people have problems with certain words, if you can understand them, then there is no worries. It's when you can not understand, and you just nod your head so many times in a conversation. I live in a multicultural society, and it gets very hard at times to understand.
this bothers you how? have a little tolerence and compassion. you must have never traveled out of your comfort zone.

Because some have not been taught to properly enunciate or spell. So they think that they can get away with not talking properly.
I guess that it has to do with their accent . Like my Grandma says 'shimp'.
