How do you know when an apricot is ripe?
I bought some fresh apricots tonight for the first time, I've only ever had dried ones before. Some of the ones I bought are yellow, and some are red-ish. How do I know when they're best to eat?

It's not the color, it's how hard they are. Usually around here the fruit is hard as a rock when purchased, and it's still green. When the flesh gives just a bit when pressed gently they are ripe. The riper they are the softer they will be - but you don't want them mushy. Don't put them in the refrigerator or they won't ripen.
They should be soft to the touch. If they are hard put them in a paper bag for a day or two to speed riping. I always choose yellow. Your in for a great treat.
Touch them, if your finger leaves a dent.. they are soft and good to eat. Do not wait til they are too ripe. If you bring one to your nose they will smell fragrant and sweet. Then just eat and enjoy.
