Usually anything instant is less healthy, because it has more chemical preservatives and condensers in it that your body does not use; and actually, finds unhealthy. So normal should always be consumed if your on the healthy track.
Instant breakfast cereals often have more salt added than the old-fashioned varieties. Also, the grains in instant porridge are in smaller pieces, which means they are digested faster, causing one's blood sugar to spike and making you hungry again sooner.
Usually it is because to make it 'instant' all sorts of things are added to it... such as milk powder and flavorings etc. The oats are also refined to make them thicken up quickly.
If you want the health benefits of oats without the hassle then I would suggest that you add your water to the oats before you go to bed at night and put it in the fridge. Then in the morning it will have softened and all you need to do is heat it up.
If you do that you can add whatever you want to the oats, such as raisins or maple syrup and at least you know exactly what you are eating.
I just asked a similar question about old-fashioned vs. 5-minute oatmeal. Some of those answers go into a lot of details. But for instant, I think the main things are all the added sugar and the fact that it is in smaller pieces (I'm thinking that would just affect the glycemic index, but I'm not sure.)
