How long will can food last such as vegetables?


Answers:
It will last until you don't want to eat it any more. What I mean is you can still eat it and not get sick but because it has sat in the can for 5 years it has become sort of un-appealing.
Personal experience, 7 years is the limit for sweet potatoes.

I think I would always respect a manufactures use by date but my personal experience is I have consumed products years after the expired date without consequences. I do my own canning and one of my favorites is tomato sauce which is a high acid vegetable. An example would be a few weeks ago I opened a jar of sauce that was dated August 1993, not quite 14 years old. Although it was darker in color it tasted just fine with no adverse effects. By the way I never use any kind of preservatives.

Most can goods have an expiration date. I would not eat it if it is much past that date.
