Basically, there are three kinds of cheeses ... Soft, Semi Hard, and Hard. Soft cheeses are like blue cheeses and goat cheeses. They spread and crumble really easy. A semi hard cheese would be like jack cheese or provolone, they are slice able and can be eaten in large chunks. Hard cheeses are those like Parmesan and Asiago, and you generally have to prepare them to make them easier to eat. They all have melting points, softs are low, hard are very high temperatures. Hope that helps.
