The difference that I have experienced with the different colors of peppers is the taste. Red is supposed to be hotter while the green and yellow ones a little less mild. These peppers are usually used together in Italian foods. They are very closely related and are always a good combination.

red peppers are sweeter, contain much more vit c, green are the most bitter of the peppers, yellow are great for color but not as flavorful as the red, basically red peppers rock.

I read that the only difference is when there picked. they change colors from green to yellow to orange to red. Green peppers are the cheapest because there picked first . with less growing time.the longer the growing time the sweeter the pepper.
