What is a good side dish to make with russet/baking potatoes?!

What is a good side dish to make with russet/baking potatoes?

I'm making grilled chicken tonight and I always make baked potatoes or mashed potatoes as a side dish, so I was wanting any ideas to make a different side dish.
Also I've tried making roasted potatoes in the oven, but they always come out some-what gooey(I think they're made better with new potatoes or fingerlings).


Answers:
You are correct about the roasted potatoes. Russett potatoes are really only good three ways - as potato salad, baked or mashed. I would suggest that you make a variation on your old standbys...

For example: Throw in a couple of garlic cloves in with the potatoes as you boil them for mashed potatoes. Drain and mash the garlic in for garlic mashed. Add some cheddar cheese to this and you have garlic cheddar mashed.

Or take a dried chipoltle and grind it into a powder and mix in with the garlic potatoes above for chipotle mashed.

Or bake the potatoes instead of boiling them and mash them. Add a good sized dollop of ranch dressing and bacon bits into the mix.

And if you bake the potatoes, you can scoop out the inside and do any of the above suggestions and do a twice baked potatoes.

Of course, easy potato salad is to dice the boiled or baked potatoes, add some diced onions, green peppers and celery. I add a tablespoon of mustard (yellow or stone ground) to ranch dressing and toss it until coated. You can add as much of the ranch dressing as you need.

You could cut the potatoes into wedges, coat them in a little olive oil+ seasonings and throw them on the grill with the chicken. They will take longer than the chicken though.

My sister taught me this recipe, it is really easy..
I have a big family so I use a lot of potatoes..LOL

All you need is potatoes(as many as you need)
salt, pepper, garlic
butter
Flour
milk

Peel potatoes and slice them as if you were going to fry them.
cover bottom of a med/lg size backing dish with potatoes, season potatoes
Cut cheese into slices and layer over the potatoes evenly.
layer more potatoes until all potatoes and cheese are gone.
on top layer add butter about 4 tablespoons for medium dish and 6 for large, 1/2 cup milk for med dish and 1 cup milk for lg dish. 6 table spoons flour. cover with aluminum foil and bake for 20 minutes on 350, then remove foil and bake for 15 minutes more at 250 or until tender and lightly browned..
Stir a couple of times through the first 20 minutes..
This will give you a thick cheese potato dish that goes with almost anything..

I like a variation of twice baked potatoes. Cut potatoes in quarters, skin and all, and boil until soft. Mash. Add butter, salt (to taste), and shredded Cheddar cheese. Heat through until the cheese is melted. Yum!

Onion potatoes with carrots:
The directions are on the Lipton Cup A Soup packages (Onion kind), don't trust me for the recipe :D
anyway, they're really good, and I always serve them with chicken, or other main dishes (I'm a tofu person myself)

Scalloped potatoes are always good.

a big salad with lots of fresh veggies and dressing =olive oil and lemon juice.
