Fruit, yogurt, rice cakes with reduced fat peanut butter, nuts, raisins, craisins, wheat crackers and veggies with reduced fat ranch dressing.

First and foremost : fruit.

If you want something more .. mmm substantial than a fruit salad (chopped apple; pear; grapes; mandarin segments) then the following always work for me.

1) I cook brown rice - enough for 2 - 3 days. On the second or third day, the refrigerated rice is nice cold with some peper to flavour it, together with some natural (non-flavoured) yogurt. I usually use traditional greek style yoghurt, which is very creamy. Works great.
Brown rice takes 30 - 40 mins boiling to cook up nicely. It's high energy food and very good for you. With yogurt, beats white rice hands down.

2) Flat pitta bread with toppings in the oven. Effectively this is a pizza. From start to finish takes 10 mins. Take a layer of the bread out, spread some tomato paste, or pasta sauce to it, add some grated cheese (yes, grate it yourself off the block!) not too much... just a sprinkle over the base and tomato. Then add some mushroom, capsicum and maybe one other ingredient (or ingredience of your chosing), then add more cheese. Tut in the oven until the cheese has melted, or just before the outer edge of the pitta bread is getting crispy. (Feeds two for snacks if it's big bread! - makes a good lunch for one.)
I keep the pitta bread in the freezer for just this occasion.

Heaps of ideas actually.. I could write for hours.. hehehheehe

One of my favorite snacks is a few almonds with some dried cranberries. Kashi bars are great. You can yogurt and granola for a yummy snack.
