Why does organic cow's milk last so much longer than the non organic?

Don't know what your definition of "Organic" cows milk is. To me, it means raw milk straight from the animal. What is calling itself 'organic' in stores is still processed. Meaning it's either ultra-pasturized and homogenized, or just pasturized and not homogenized. Either way it's a far cry for truly organic milk.
Our milk comes from an 'organic' dairy. The cows are free-range, grass fed animals. They are steroid, hormone and antibiotic free. They are well cared for and 'happy' cows.
It is raw milk.
We get 1 gallon of milk once a week. Sometimes it lasts the entire week, sometimes it doesn't.(meaning we consume it) It has never 'gone bad'. Still, there are no preservatives, and if the milk is not kept cold, it will go bad. This isn't/wasn't a problem when we all had cows in the back yard. You had to milk twice a day, milk was always fresh.
So, I would say that if what you are getting is the ultra-pasturized "organic" milk, that is the reason it lasts longer.
Most states, if not all, have laws against you being able to purchase raw milk from dairies. You can only drink/get raw milk if you own the cow. In order for you to get around that law, you must buy a share in an organic dairy herd. Now you 'own' a cow and can get and drink raw milk. Which is sooo much better for you! One physician wrote:
""I have prescribed raw milk from grass-fed animals to my patients for nearly fifteen years. Time and again I have seen allergies clear up and dramatically improved health. Particularly in children, middle ear infections usually disappear and do not recur on raw milk. Both children and adults unable to drink pasteurized milk without problems have thrived on raw milk. In hundreds―perhaps thousands―of my patients using raw milk, not one has ever developed a salmonella, campylobacter, or other raw-milk-related infection."
So, everyone who wants truly Organic milk...go raw!! It's great!

For one thing, it's homogenized.
