Ceviche De Camarones
Ceviche is common in the central part of the Americas from Mexico to Ecuador. Ceviche De Camarones is shrimp that is literally cooked in lemon juice without actually cooking it in terms of using an actual heat source. Although many countries usually serve this dish with fish, the shrimp version is quite popular in Ecuador. This tart dish is usually made with onions and parsley.
Tortilla De Papa
Tortilla de papa is a simple yet popular dish and quite similar to how they are made in Spain or other countries in Latin America. This dish is basically a large potato pancake that can be eaten as a appetizer, entree, or snack.
* corvina - sea bass
* cuy - guinea pig
* Fritada - roast pork, corn, cheese, avocado, potatoes and plantains
* locro - a combined cheese, avocado and potatoes soup
* humitas - cornmeal tamales
* trucha - trout
*choclo (barbecued Andean corn)
However, whilst soups are undoubtedly Ecuador's specialty food, every Ecuadorian gets involved with making their own "aji". Aji is the hot sauce that accompanies most foods of Ecuador - and be warned: some can be quite spicy!
For those of interested, the following are the terms that foods in Ecuador are known by (with their English language equivalent):
* battered (fried) = Apanado
* deep-fried = Brosterizado
* grilled = A la brasa
* pan-fried = Frito
* steamed = Al vapor
* stewed (meat) = Seco
Ecuadorians also enjoy empanadas, which are meat filled pastry, and choclos, which are deep-fried ears of corn.
