4: Old or stale items are pulled daily;
generally no more than a two day shelf life
for the local mom and pop variety of bakery
5: They'd rather bake too few; than too many
Unless they already have an order for a specific product.
6: Baked goods are cooled on racks, properly
7: Refrigerated products are kept in cold cases.

They are professionals, sometimes tho, they do not taste as good as they look.

Practice, practice, practice.

Just practice, because the people who work there are very talented with years of experience.

precision & TONS of practice

They have lots of practice and talent and work very hard at it to make it look better than ever. I know this because my grandma does the same but does not on or work at one although she probably could.

The display case makes a big difference.
If you stuck one of your desserts under a glass case, people would buy it up too if it sounded good to them!
