avacado and my home made salsa.
An easy one:
1 package of taco seasoning
4 oz. package of cream cheese softened
8 oz. package of sour cream.
Mix this together and let sit in frigde for about an hour before serving.
I ALWAYS EAT A CHICKEN DIP THAT HAS: 1 CAN OF CHICKEN, 1 JAR OF SALSA, SPREAD SOUR CREAM ON TOP OF THAT, THEN SPRINKLE MEXICAN CHEESE OVER THAT, THEN TACO SEASONING ON TOP OF THAT. iT IS AWSOME!

ROTEL CHEESE DIP
1 lb. ground beef
2 lb. box of Velveeta cheese
1 med. onion
1 can Rotel tomatoes
Cook ground beef and drain off grease. Add chopped onion and let cook until onion is tender. Add Rotel tomatoes (break up tomatoes with your hand). Slice up Velveeta and add to other ingredients. After cheese is melted, remove from heat and let stand until thickened. Then serve with plain Doritos or Tostitos.
ALSO, TRY THIS:
Spicy Guacamole Dip
4 avocados
4 cloves garlic, minced
1/4 sweet red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 red chiles, seeded and finely chopped
4 tablespoons olive oil , divided
Juice of 1 lime
Salt and pepper to taste
Pinch of cayenne, for garnish
Cut the avocados in half lengthwise and remove the seeds.
Scoop out the meat into a medium-size bowl and mash with a fork. (Do not process in a food processor or blender.)
Gently stir in the garlic, red onion, jalapeno pepper, red chiles, 3 tablespoons of the olive oil, and lime juice. Add salt and pepper to taste.
Transfer to a serving bowl, if necessary.
Drizzle the remainder of the olive oil over the Guacamole and sprinkle with cayenne for presentation. Serve immediately. Makes 3 cups.
Note: Guacamole Dip does not keep well, but adding a tablespoon of lemon juice helps preserve the color.

Easy Spicy Refried Bean Dip
2 cans refried beans, (about 15 ounces each)
1 envelope taco seasoning mix
1/2 cup chopped onion
2 cups shredded Monterey Jack cheese or a Mexican cheese blend
2 to 4 drops Tabasco sauce, or to taste
chopped jalapeno or mild chiles, to taste
homemade salsa. tomatoes, green onions, brown onions, cilantro, pickled jalepeno peppers, and lots of lemon juice. and salt. mmmmmmm

It's called PicoDeGillo. It has cut up tomatoes, cilantro, onions, and a little jalapeno. It's a very mild salsa and is excellent with chips or over food. You can usually get it at restaurants and stores.
