My favourite food changes all the time, depending on what new kitchen toys or cookbooks I've got. This week my favourite is spinach & ricotta ravioli with sundried tomato sauce.

You would need a pasta maker, roll your pasta out once you've made the filling. Make the pasta with 175g/6.5oz fine white flour (00 type), 75g/2.5oz strong white flour, 1/4tsp salt, 2 eggs and 2tsp/10mL olive oil.

filling: 200g/7oz baby spinach, 1 brown onion, finely chopped in the food processor, 25g/1oz butter, 1/2 tsp nutmeg ground, 75g/3oz ricotta cheese.

cook the onion in a pan until soft, with the butter, add the spinach and cook until it wilts, turn off the heat and allow to cool. Put it in the food processor with the nutmeg and ricotta. Put it on your pasta along one side, glaze the edges with egg white, fold it over, squeeze the edges together, cut into squares, transfer to a floured tray and rest for 1 hour. They cook in 3-4 minutes.

semi sundried tomato sauce

2 medium brown onions - chopped coarsley, 2 cloves garlic - quartered, 1 cup/150g semi dried tomatos in oil, 1/4 cup/70g tomato paste, 2 fresh red chillis - seeded and finely chopped, 2 cups/500mL beef stock.

Put all but stock in food processor and turn into a paste, cook in large frying pan, stiring, 10 minutes, add stock, cook on low simmer, stiring, 10 mins more. Sprinkle with some fresh parsley before serving.

I love 'oysters' of all kinds except 'raw' ... and the 'memory' is one I was told about ... evidently when I was three months old, my mother and grandmother both had to be 'out' and left me with my grandfather, with 'orders' to feed me some 'baby food' for my lunch. Grandpa looked at it and decided that it didn't look tasty, so he opened a can of 'smoked oysters' and crushed them up and fed them to me ... and I was well into the second can when they came home. They both 'blew up' and called my doctor, thinking Grandpa had 'poisoned' me ... my doctor had one question ... did I like them, or was I spitting them out. They said I'd already finished one can and was eating the second. He said 'Then I guess she'll be okay' and after that I never had to eat 'jarred baby food' again ... and I STILL LOVE OYSTERS to this day ...
