Why does chilli powder loosr its taste when oil is added?


Answers:
It may be that you are not giving the flavor enough time. Even chili powder gets stronger the longer it cooks and/or sits. Just like the chili pepper itself will do that. I used to think my chili wasn't good and very bland. What I discovered is that it needed to sit and simmer almost all day. Now it's flavorful.

I never knew that about chili powder, but I do know that fat has an affinity for (binds to) capsacium (the substance in the powder that makes it hot). Not that this is the answer to your question, but it might have something to do with it.
