People using lots of energy, such as the emergency services need plenty of slow release energy to keep their blood sugars level and therefore need lots of carbohydrate! Mexicali Veggie Stew
1 pkg. taco seasoning mix [divided]
12 ounces bonless skinless chicken breast
2 cans stewed tomatoes (italian style)
1 pkg. frozen corn and green beans
4 cups tortilla chips
chicken spices(cayenne, paprika, tabasco)
nonstick spray
1.Place half of taco seasoning in small bowl. Cut chicken thighs into 1 inch pieces; coat with taco and chicken seasonings.
2.Coat large nonstick skillet with cooking spray. Cook and stir chicken 5 min. over medium heat. Add tomatoes, corn, beans, and remaining taco seasoning; bring to a boil. Reduce heat to medium-low; simmer 10 min. Top with tortilla chips before serving.
