Answers:
Being a former chef and having used both of the products "Jay Lew" speaks of, but he has one thing wrong, here in Canada we have Canadian Bacon, we just refer to it as "back bacon", it is a smoked pork loin that has been form into a round.

Peameal Bacon is an unsmoked untrimmed loin, pickled in a cure, rolled in cormeal, hence the name peameal. We also have side or strip bacon, here, along with turkey bacon, chicken bacon and veggie bacon.

More often now we can get all products at the supermarkets, but the best stuff is from the craft butchers who double smoked or add specific cures and spices, I buy a double smoked, over juniper, pepper bacon, it is the best for breakfast but makes a darn good sandwich too.

no. it has absolutely nothing to do with Canada.

i dont think it does have anything to do with it, but i do know the name bacon was originated in Canada, then stolen by some other country.

Canadian bacon is a term used in the United States and Canada, but with differing meanings. In the United States it refers to any lean meaty cut of bacon, and is sometimes used as a pizza topping. In Canada, Canadian bacon, which is also known as peameal bacon, refers to a specific variety of unsmoked lean bacon that has been sweet pickle-cured and coated in yellow cornmeal. Other proteins, such as turkey and beef, can be made in the style of Canadian bacon by employing this same sweet pickle and cornmeal process. Canadian bacon, as in the American interpretation (Back Bacon) actually is rarely eaten by Canadians unless in fast food breakfast sandwiches from American chain restaurants.
