see my question about cheating meat from supermarkets which makes me wonder what other dirty tricks they play on us? Come on, employees, you can tell us.
Answers:
there is a program on TV, WHISTLEBLOWER (BBC1 Tuesday 9pm) which is a documentary about 2 undercover reporters working in British supermarkets to reveal health & safety food issues. It's sounds like a real eye-opener!
Will we switch to Farmer's Markets and Farm shops for shopping after that?
I dont work for a supermarket or anything, but I am very interested in what the others post! Good question, and good for you for fighting back!

True...this does not answer your question but it sure is in spirit with your theme. :o)
A couple things I've noticed is that the lighting at the meat area seems to give meat a deeper red color, but when you walk away from the meat section, the stuff looks a bit more gray.
Also, packing the good looking meat on top with the fatty cuts underneath. Same with packs of bacon.
years ago,,,my bro said that they had to put red jello in hamburger to enhance the color.
If you ever see them sorting though the meat it has nothing to do with the quality as Dave alludes to, it is stock rotation.
They are merely putting the newer stock on the bottom, so the old sells first.
I always go to the bottom of the heap, because (a) it will be fresher, (b) it will be colder.
That sounds like a dirty trick, but it is good retailing.
In term of rubbish meat it isn't.
The meat is packed by people just like you and I.
You will be at you work station and will be given a tub of 60 pork chops and you will be told to pack them in trays of two.
When you have finished that you will get another tub of 60 and told to pack them in threes.
If I have managed to bore you by now, imagine how the packer feels, or even cares about what he/she is packing
