What is an alternative to gelatin?

something that is vegan or kosher.


Answers:
Carragenan might do.... there are several vegetable gels that can be used.... never the same though... those gels are not as elastic, but, they are good enough. Check kosher food stores... they carry those gels. Food grade Agar-Agar may also be useful.

Nothing works as well. If you want kosher, there are fish based gelatins available that are parve. If you are looking for vegetarian, you could try fruit pectins. They often set up stiffer than gelatin. If you don't need the gel to be clear, there are some ingredients like agar agar or some oriental rice starches that set up.
