Grated Cheese?!

Grated Cheese?

Why does grated cheese taste better (or perhaps just different) to sliced cheese and does this only work with certain types of cheese?


Answers:
Once cheese is cut, it starts to lose flavor, therefore the more you cut it the quicker it tastes different.... Of course grated cheese also dries out sooner (extra surface area and all that).
I think that this affects drier cheeses less than the wetter ones...

Usually when you buy pre sliced cheese it is actually American or Processed cheese. Grated cheese is real cheese.

Same reason a handful of m&m's tastes better then one at a time.

The difference is that you are dealing with a different type of cheese. Two examples are Romano, and Parmesan cheese. These are both hard cheeses and have been aged for a greater period of time, usually having a sharper, or nuttier taste then soft cheeses. These cheeses taste best when you buy a chunk of the cheese from a local market or store and then grate it yourself as you need it. Think fresh grated cheese at Olive garden or any other good Italian place.

Probably because the texture is different, and when you eat a slice of cheese, the taste is more concentrated.
