I live by myself in the mountains, so I must cook or I'd starve (its too far from town to always be getting takeout.)
My favorite meal that I cook is chicken enchiladas in a green sauce with red rice and refried beans...for dessert choco peanut butter brownies...

I try to cook occasionally. One time my meatloaf turned out so bad that we took a picture of it. The microwave was a great invention.
thanksgiving for my sorority...
i cooked a turkey... on the outside i squeezed the juice of two halved lemons, rubbed a little butter, salt n pepper, garlic, and paprika. like i said the two halved lemons inside, along with sage, thyme, and rosemary.
i then baked macaroni and cheese in a casserole dish. i used sharp cheddar and white cheddar, and elbow macaroni. add breadcrumb (plain) on top with some tabs of butter and you will be in heaven.
i also baked a sweet potato casserole. basically it's sweet potato pie filling with brown sugar and molasses mixed in... add both to taste... put it in a casserole and add a marshmallow and brown sugar topping... delish. if you want, you can make a graham cracker crust for the bottom of the casserole... use graham cracker crumbs mixed with melted butter.
i also made pumpkin tartlets. buy philo dough cups premade, add pumpkin pie filling, top with marshmallows and bake.
everyone seemed to enjoy everything i made... they ate it all with no leftovers!!!
I do all the cooking when I'm home. I had to learn to cook years ago when I married my wife and joined her family (1 pre-teen boy, 1 teen girl). They are grown and gone now but I still really enjoy cooking and I'm pretty good at it if I do say so my own self. My specialities are a Squash Bisque (a creamy and silky soup) and Creme Brulee that will make you glad to be alive.
There is just something very satisfying about taking a handful of ingredients and creating something delicious and memorable that actually becomes a part of someone. How else could one express ones creativity and love more eloquently? If I could change careers I would become a chef.
I cook quite often.
I often make Macaroni Schotel. My family say there's nothing like my Mac Schotel. yumm...
Tonight's tea was home made Swiss Roll, with grated carrot in the mince.
