Whats a cool meal to cook...?
I need to know some new recipes I feel like we have only a few meals that we cook all the time (Spaghetti, chix and mashed potatoes, Tacos, etc.). I need something new. Any suggestions. My only thing is I would like it to be somewhat on the easier side I am not a pro chef or anything :) !! THANK YOU

When I want to switch things up, I go ethnic. It's generally a lot healthier than the junk we eat normally. (processed cheese food, meals out of a box etc. That stuff will kill you long term.)
Here's some of my staples:
Greek night
-chicken breasts cooked in olive oil, lemon juice and oregano
-pita pocket bread
-cucumber sauce (aka tzatziki: plain yogurt, minced cucumber, lemon juice, a little minced garlic, and salt to taste)
-green salad
-lemonade
Brazilian Barbecue (did this for a party last weekend, was a huge hit)
-grilled beef, any cut you like. Grill slowly over indirect heat, basting frequently with marinade(3 c water, 1/4 c salt, 2 cloves mashed garlic)
-black beans
-rice
-limeade for the kids, Caipirinhas for adults (a little like a mojito, without the mint)

Cheesy Italian Pasta Bake
Prep Time: 25 min.
Total Time: 45 min.
1-1/2 cups wagon-wheel pasta, uncooked
1lb. lean ground beef
1 cup each: shredded carrots and zucchini
1 red pepper, chopped
1 can (8 oz.) pizza sauce
8 oz. (1/2 of 1-lb. pkg.) Velveeta Pasteurized Prepared Cheese Product, cut up
1/2 cup Kraft Shredded Low-Moisture Part-Skim Mozzarella Cheese
PREHEAT oven to 350°F. Cook pasta as directed on package. Meanwhile, brown meat in large nonstick skillet on medium-high heat; drain. Add carrots, zucchini, peppers and pizza sauce; stir until well blended. Cook 5 min. or until vegetables are tender. Drain pasta. Add to meat mixture along with the Velveeta; stir until well blended.
SPOON into 8-inch square or 9-inch round baking dish sprayed with cooking spray; sprinkle with shredded cheese.
BAKE 15 to 20 min. or until heated through.
Makes 6 servings, 1-1/3 cups each.
Substitute:
Prepare as directed, using whole wheat pasta, extra lean ground beef and Velveeta Made With 2% Milk Reduced Fat Pasteurized Prepared Cheese Product.

Easy Bistro Chicken
2 tsp. oil
3 cups sliced fresh mushrooms
1 medium onion, chopped
1 can (15 oz.) stewed tomatoes, undrained
1/4 cup KRAFT Zesty Italian Dressing
3 Tbsp. tomato paste
4 small boneless skinless chicken breast halves (1 lb.)
1 cup KRAFT Low-Moisture Part-Skim Mozzarella Cheese
2 slices OSCAR MAYER Ready to Serve Bacon, crumbled
HEAT oil in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 5 min., stirring occasionally. Stir in tomatoes, dressing and tomato paste.
ADD chicken; cover. Reduce heat to medium-low. Simmer 12 min. or until chicken is cooked through.
SPRINKLE with cheese and bacon; simmer, uncovered, 5 min. or until cheese is melted.
TIPS:

Serve with hot cooked rice or orzo.
Substitute
Substitute 1/4 cup OSCAR MAYER Real Bacon Bits for the cooked and crumbled bacon.
Stuffed bell peppers and mashed taters are easy and good !
try this, make a whole bunch of cheese sandwiches, put sliced tomato or pizza sauce in them, cut off the crusts. cut into 4 triangles.
lay them in a buttered oven dish with the points facing up,
mix up the mixture you would use for scrambled eggs, add salt pepper and other seasonings that you like...pour it into the dish until the sandwiches are covered. Bake.
It's like a bread and butter pudding but pizza flavoured...sounds yukky but kids love it!

Rosemary Potatoes
1/4-cup olive oil (can use less)
5 large garlic cloves, minced
4 large white potatoes
1 tablespoon dried rosemary, crushed
Salt and pepper to taste
Heat olive oil in large fry or sauté pan over medium heat; add garlic and cook about 1 minute, being careful not to brown.
Add potatoes, rosemary, salt and pepper. Add just enough water to add moisture to bottom of pan.
Cover and reduce to medium-low. Cook until potatoes are tender, stirring occasionally and adding water as needed.
Serve immediately.
