Why does the sugar and water form crystals basically the rock candy? help i need to know.

rock candy is a very simple hard candy made by allowing a supersaturated sugar syrup to evaporate slowly (sometimes for up to a week), during which time the sugar crystallizes into chunks.
I dont know..but whatever u do...dont drink soda after u eat them..ure stomach will EXPLODE!!! lololol
Most dangerous candy ever made. STAY AWAY!
