You can, they are very tasty, like a richer version of a chickens egg.
The main reason you don't see them on sale is that they are generally used for breeding, however if you find a friendly turkey farmer he may let you have a couple.

Turkey Egg
A white to cream colored egg with brown speckles that is laid by a hen turkey. Similar to chicken eggs, except larger, turkey eggs weigh approximately 80 to 90 grams (one and a half times more than a large chicken egg) and are slightly larger than a jumbo chicken egg. They have a flavor that is very similar to a chicken egg and contain 135 calories, 9 grams of fat, and almost 740 mg of cholesterol, all of which are significantly higher than for a jumbo chicken egg. Since turkey producers have a low rate of egg production per bird, most of the turkey eggs are used for hatching more turkeys, so they are seldom available to the consumer except in some specialty markets.

Supply and demand to start with. Very little demand because the chicken egg industry is king of the roost so to say. Very few people would even think about eating them here in the US. The other thing is a turkey only lays 4 eggs a week. Need a lot of turkeys to get a lot of eggs - and they eat a heck of a lot more then a little chicken.
I've eaten turkey eggs. They have a very light texture, despite the size of them. Most independent butchers or shops may sell them, as well as duck and goose eggs.

good question! why these are not eaten?. perhaps turkeys do not lay many eggs.
People do eat turkey eggs but they are more expensive and rarerly eaten then chicken eggs
