Granny Smiths are a good deal larger, green, very firm/crunchy, juicy, and pretty tart - a real bite of sweet-sour flavor.

EDIT:

I think the caramel tastes better on a slightly tart apple. You want a firm apple that'll take the heat of the caramel, but one that's not too big or hard to bite into. A Braeburn or Macoun might be good. I think a GS is too big and maybe too tart, though if you can get past that, the tart vs. sweet is fun. I think the delicate flavor of a Gala would be swamped under caramel.

granny smiths are more tart.

granny smith apples are more sour and gala apples are smaller

Granny Smith apples are green, and make very good pies. While Gala apples are red, with some yellow too, very sweet.

Gala ones can be frozen b4 they get to you and get mushy quicker. For a fantastic Apple I would recommend New Zealand Braeburn. Solid and delicious. Their seasons are in reverse so now it's Fall. Depends on how they ship to your island when and how they arrive. Granny's u know are tasty and different.
Gala is suppose to be firm and sweet. Crisp if u are lucky. I am from Hawaii and we never got decent ones shipped. Good luck and enjoy! Aloha.

Gala are great for eating, GS are great for pie making b/c they hold up to heat well, keep their shape, and balance out the sweetness from added sugar and spices.

GS are much more tart and twangy, crisper, adn have a neon green skin, whereas Gala are more reddish/pink, w/ an occasional yellow blush on one side. I would say most GS are larger than Gala, too.
