Depends if you are talking about the refridgerator part or the freezer. you can have it in the freezer for a long time..the refridgerator...not so long..it will start to smell really bad. I would say after about 3 days after the sell by date it will start smelling....i know from experience!
I would suggest cooking it within 3 days at the most, after you bring it home from the market.

Until it smells bad. Actually the absolute best steak is cooked the day before it goes bad. Best to ask your butcher. A week is a good rule of thumb.

If the steak has no bone in it and is sealed properly, you can leave it for about 2 weeks. If it has a bone, maybe 1 or 2 days. The bone promotes decay and rotting. Most steakhouses "age" their meat....all that means is they leave it in the fridge. I work in a grocery store.....call a local butcher he/she will tell you the same. Be sure it has been sealed properly...no air to it at all.
For safety involving fresh meats, just 3-5 days.
However long the date says you can before it expires. Or you could just freeze it.
If your buying the steak to eat within two to three days then leave it out. If you are keeping it longer than that, freeze it. Make sure not to re-freeze the steak once it is thawed out. It will allow harmfull bacteria to form on your food making it dangerous to eat.

To Refrigerate: Meat should be stored tightly wrapped to prevent it from drying out. Whenever possible, leave the meat wrapped in its original package. If it is necessary to rewrap, wrap tightly in plastic wrap or foil.
To Freeze: Remove the meat from the original package and rewrap tightly, using moisture proof heavyweight plastic wrap, foil, freezer bags, or freezer paper.
The most you should leave beef in the fridge is about a week. If you need more time than that throw it in the freezer.
Most restraunts keep meat for about 5 days before throwing it out. This does not include chicken or fish. You can generally tell by the smell. It is going to look very brown and have a spoiled smell, it might even be a bit slimy! Another way to tell is by cutting open the meat. If the inside is red and the outside is brown it might still be ok. Also steak is going to last longer than ground beef.
