You can find a lot of good recipes on food network. I would recommend Chicken Marsala. It's super easy and most adults love it!!! It requires wine so if you can't get a hold of wine then try Chicken Picatta both are tum!

Umm, Chicken marsala
Asparugus
Garlic mashed red potatos
Artichoke/spinach dip (With french bread)

Chicken Marsala Recipe

1/2 cup all-purpose flour
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.
Heat the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. When the wine has reduced by half, add the chicken stock and cook for 3 minutes, or until the sauce has thickened slightly. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste. Garnish with chopped chives and serve immediately.

Spinach-Artichoke Dip

1 (10-ounce) package frozen chopped spinach
2 (13 3/4-ounce) cans artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated Parmesan
1 cup grated pepper jack cheese

Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.

Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor.
Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes.

Garlic Mashed Red Potatoes

8 medium red potatoes, quartered
3 cloves garlic, peeled
2 tablespoons butter or stick margarine
1/2 cup fat-free milk, warmed
1/2 teaspoon salt
1/4 cup grated Parmesan cheese

Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until the potatoes are very tender. Drain well. Add the butter, milk and salt; mash. Stir in Parmesan cheese.

Sometimes older people can't chew meat that well. You could try (outdoor) grilling thick halibut steaks wrapped in foil with some type of marinade and maybe a few roasted red peppers on top. For a veggie how about grilled veggie kabobs. A do ahead cold jello salad. And if you have a deep fat fryer some hot fries with dinner. If you need a non-alcoholic drink with dinner, how about a tequilia sunrise without the tequilla and a marachino cherry on top! 'Tis the season - cheers!

I have a very good jello salad recipe I can add if you like. Let me know w/ "add'l details" on your question. I'll check back later tonight.
