Cucumbers were probably first pickled 4400 years ago in Mesopotamia. Cucumber pickling was also known to the Ancient Greeks and Ancient Egyptians. Cucumber pickling remained widespread across the Levant and the Maghreb, where it is still very popular today.

Cucumbers were probably first pickled 4400 years ago in Mesopotamia. [1] Cucumber-pickling might have spread through the Jewish diaspora[citation needed]. Cucumber pickling was also known to the Ancient Greeks (Aristotle is reported to have praised pickled cucumbers[2]) and Ancient Egyptians. Roman citizens valued pickled cucumbers as delicacies,[citation needed] and many different techniques were developed. Cucumber pickling remained widespread across the Levant and the Maghreb, where it is still very popular today.

This simple question does not have a simple answer. It all depends upon how you define the word "pickle." Food historians trace the process of pickling (preserving foods in salt/brine or vinegar) back to Ancient Egypt. These peoples were known to have pickled fish and melons. If you mean the pickling of cucumbers (what we usually call pickles today) that practice perhaps dates back to India, about 3,000 years ago. Some food historians say William Beukelz, a Dutch fisherman invented pickled foods in the 15th century.
