What is the best way to preserve onions?
i have about 30 lbs of red onions and i dont want them to go bad
Answers:
first off, never store them near potatoes. potatoes take the moisture from the onions, making them both go bad faster. store them in a cool, dark place. some people take old pantyhose and put an onion in, tie a knot, put another in, tie a knot, and so on. that way you can hang them, (cool and dark), they're not sitting on top of each other, and you just cut the knot as you need one. you can also dry them:
Home-dried onions are ...typically sweeter and more concentrated.
Dried onions impart a unique sweet, deep flavor to soups or stews. Or chop them and use as an interesting garnish for salads.
Oven Dried Onions
DRYING:
When drying onions, use the sweetest, most pungent onions available for the most flavorful results. To dry onions in the oven, peel and then cut into slices 1/4 inch thick. Arrange on a rack on a baking sheet or roasting pan and place in an oven preheated to 150F. Store in the oven, undisturbed, for approximately 3 hours, or until the onions are brittle.
30 pounds is alot for the way I do it but if you feel like spending a little ok alot of time dice then and freeze one or two in a freezer bag. I use them in all my cooking and they last up to a year in the freezer as long as you keep them frozen. You could also dehydrate them and they would last longer.
Keep them in a cool, dry place. Not in the refrigerator, and definitely not near potatoes. (They will make each other spoil quicker!)
Wow, that's a lot o' onions.
Cool and dry - that is key. Best to keep them in a breathable bag, like a mesh veggie bag.
