I like both when scrambled or over easy but only the white when hard boiled. However if I were doing the health conscious thing it would be whites only all the time.

defiantly yolk is better..dont mind white but hate it when crispy and cut it off

the yolks are good for creme englaise [custard] creme brullee' creme caramel, hollondaise sauce and mayonnaise and the whites are good for meringue. duck eggs are good for baking. I like scrambled egg with smoked salmon, garlic chives and Parmesan stirred in after it's lightly cooked. also poached egg in vinegar on top of spinach with hollondaise sauce. EGGS ARE AMAZING

Do not like boiled egg yolks they are too dry
