How long can olive oil that has been opened remain unspoiled? Does it ever get rancid or change in it's flavor?


Answers:
Most of the posters are correct when they assert that olive oil can stay good for a long time, but only if it is stored correctly.

Keep the oil in a dark, cool place, away from any heat source. Heat will break down the oil and cause it to turn rancid. DO NOT REFRIGERATE, however. Put it in the pantry, well away from light and heat and you should be able to use it for a long time.

Yes it does. Don't know the time but you can go by smell. Put it in the ref.

Average shelf life for olive oil is 18mths. Olive oil is rancid, when it tastes like pumpkin.

Stored correctly, it can be kept for years!

Forever. Its an oil. Oil lasts forever. Just dont put it in the fridge, it will start solidifying and curdling.
It may lose some of its flavour after a while, but trust me, I live in Greece, and most houses have like 30L vats of the stuff and are perfectly happy to leave it in the barrel under the sink and take a cup from it everyday.
